I believe it's the line between the center of the nose radius and the
trailing edge that really defines incidence. So, if you make a Vee (on its
side) for the leading edge and a pad to rest on the trailng edge, join the
two up with a bridge, that should do it.
I do know that the leading edge profile is important. A certain Europa had
a stall speed 10 kts too high. Turned out to be bad LE profile.
