Evaporational cooling? Your finger warms the area, keeping the water water.
The towel, at a considerably lower temperature than your finger, removes all
but a fine mist of water which then cools and freezes as it evaporates? It would
be interesting to know what the dew point and temperature was when it
occurred. Puzzling for sure.
