If you have the space, you could have a few long tables, the type that are
leg-foldable, close by to your workbench. When you need to move the wing off
the bench, you just slide it over, and let the end of the wing tip down to
the lower height of the table, slide it (it has a slick table top), lower
the other end down, thus effecting the transfer. Works in reverse, and is
workable by a party of 1. The wing is stored on the table, and moved off to
different storage only when it is complete.
