Tony, If you want an extraordinary stay I can recommend "Wallett's Court Dover Spa Hotel". It is about 10 mins from the docks. It is so old that it is mentioned in the Doomsday Book!! Super food also. Ask to stay in one of the rooms in the main house if possible.
