I wouldn't do it in two steps. reasons:
(1) flox tends to contract while curing. You might end up with
a flox-surface that is lower than the surrounding foam area.
As epoxy cures to a wax-surface with degraded adhesion it will
be necessary to sand off that wax. Peel ply doesn't break
the wax as well imho. And then you will be sanding a very
solid flox area adjacent to foam. That's not good for the
foam.
(2) Get yourself a helper for the wings. Then the time between
floxing and skinning won't get you into trouble
(3) Take a look at finished classic wings - you'll always see the
ribs. Flox does obviously contract further over the months.
