I would not eliminate the central tunnel, although I know it has been done.
The central tunnel does provide some strength in the event of a serious
bump, (like mine) if it wasn't there the front of the airplane would come
back to meet you even harder than mine did. It would certainly have meant
goodbye Graham and Isaac.
If I ever build again I would strengthen the central tunnel in one or two
places, around the seat belt attachment but also along the top surface. Not
that I intend to lose another argument with the ground but who knows what
may happen.
IMHO the best thing to do with the space is use it for something else but
not to remove its stiffness.
